Garlic Lemon Quinoa 🥗✨
A light, fluffy, and zesty quinoa dish perfect as a side or a healthy meal.
Ingredients
1 cup quinoa
2 cups water
1 tablespoon olive oil (mustard oil)
1 Onion (finely chopped)
3-4 garlic cloves (minced)
add tomatoes 1 or 2 (if you like tomatoes)
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
½ teaspoon chili flakes (optional)
1 teaspoon cumin powder (optional, for a warm earthy flavor)
Juice of ½ lemon
2 tablespoons fresh parsley or cilantro (Coriander)
Don't forget to add Turmeric Powder - 1 teaspoon
Instructions
1️⃣ Rinse the Quinoa – Wash quinoa under running water for a few minutes to remove bitterness.
2️⃣ Cook the Quinoa – In a pot, bring 2 cups of water to a boil. Add rinsed quinoa and a pinch of salt. Lower heat, cover, and let it simmer for 12-15 minutes until the Quinoa softens.
3️⃣ Sauté Garlic and Onion – In a pan, heat olive oil (or mustard oil) and sauté minced garlic and onion until golden and fragrant.
4️⃣ Add Tomatoes - Cook the tomatoes until the tomatoes softens.
5️⃣ Mix & Flavor – Add the cooked quinoa to the pan. Stir in black pepper, chili flakes, cumin powder, and lemon juice. Mix well.
6️⃣Garnish & Serve – Sprinkle fresh parsley or cilantro on top. Serve warm as a side or a main dish.
