Mango Pickle Recipe

Authentic mango pickle, or "Aam ka Achar," is a traditional Indian condiment made from raw green mangoes, a blend of roasted spices (mustard, fenugreek, fennel, and nigella seeds), salt, turmeric, and chili powder, all mixed with mustard oil and left to mature in the sun for a tangy, spicy flavor.

Mango Pickle Recipe

Hi, in this video we will learn the authentic way of making mango pickle.

Ingredients we Required :

  • Raw Mango ( рдХрдЪреНрдЪрд╛ рдЖрдо ) - 2 kg

  • Turmeric ( рд╣рд▓реНрджреА рдкрд╛рдЙрдбрд░ ) - 2 tsp

  • Red Chilli ( рд▓рд╛рд▓ рдорд┐рд░реНрдЪ рдкрд╛рдЙрдбрд░ ) - 1.5 tsp

  • Fennel and Coriander рд╕реМрдВрдл, рдзрдирд┐рдпрд╛ - 4 tsp

  • Fenugreek ( рдореЗрдереА рджрд╛рдирд╛ ) - 1.5 tsp

  • Nigella Seed ( рдХрд▓реМрдВрдЬреА ) - 1 tsp

  • Garam Masala ( рдЧрд░рдо рдорд╕рд╛рд▓рд╛ ) - 1.5 tsp

  • A Small Bowl of Oil (Mustard Oil)

Method :

  • First, choose a properly mature raw mango, then cut it into slices or any other shape you want for your pickle.

  • Now, we will let the mangoes marinate with salt for 2 days. It means, Now we will add salt to the mangoes slices and let them sit for 2 days.

  • After 2 days, the mangoes will have released some water, and the peel of the slices will have turned slightly yellowish-green. This means they have marinated perfectly.

  • Now, we will dry the mango slices in the sun for 1 day. In summer, 1 day of sun provides the perfect dryness for the pickle.

  • If you are confused, for mango pickle, we need to dry the slices until they are less than half dry.

  • And we will use the marinated water later, so don't throw it away.

  • Now we need some spices: turmeric, red chili, fennel, coriander, fenugreek, nigella seeds, garam masala, and mustard oil.

  • The quantities of the spices are given above.

  • Now, mix all the spices with the mangoes we have sun-dried.

  • Now, we will add the marinated water. Marinated water helps the mangoes become soft, and without it, mango pickle cannot be made.

NOTE - We have used Dussehri mango because Dussehri mango pickle has a fabulous taste, but you can use any other mango as per your convenience.
